Penny’s Italian Panini

For these sandwiches, you can use any small sweet tomatoes Heat the bread and melt the cheese before filling the sandwiches so they will stay together
1 Pkg of flatbread from your local grocery store
1/2 lb of Smoked Mozzarella Cheese

Filling:
1 1/2 cups yellow cherry tomatoes, halved
1 1/2 cups red cherry tomatoes, halved
1/2 cup thinly sliced fresh basil
3 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon chopped fresh oregano
1 garlic clove, minced

Directions:
Put slices of mozzarella cheese on flat bread and melt either in a sauce pan or microwave. To prepare filling, combine tomatoes, basil, vinegar, olive oil, salt, pepper, minced garlic and chopped oregano; toss gently to coat. Spoon 3/4 cup tomato mixture into each crust, and fold over. Great with some red wine. :)
